I'm not kidding when I say this is possibly the weirdest, but the easiest potato salad of all time.
I've made really rather elaborate potato salads before, with the dressing made from fifteen different ingredients I had to measure and mix myself. And they ARE good... but so is this one!
And the secret weapon? Coleslaw dressing. Yep, I'm mixing my metaphors, confusing my side dishes and generally breaking the laws of nature. But it's all for a good cause - a fast, easy and delicious potato salad that will make people think you spent hours slaving over it. Excellent.
I won't give measurements, it's all to taste, and easily made to however many servings you want.
green onion, sliced
hot english mustard
1. Dice potatoes and cook in boiling salted water until just tender - you don't want them breaking up too much.
2. Add coleslaw dressing, mustard, parsley and green onions and mix. You can add eggs too, I just didn't bother this day. But it's a great addition! Serve chilled or at room temperature.

I see what you mean - sorry, I should have been more clear. I meant fifteen individual components of a dressing I had to mix myself, as opposed to pouring directly from a bottle. Does that answer your question?ReplyDelete

The beauty of store bought coleslaw dressing is that the number of ingredients and their composition is somebody else's problem. Probably best not to overthnk it!

I was just thinking potato salad the other day. Must be summer? I always over cook my potato so have started steaming it, which seems to help a bit. Must say I never considered the slaw tactic, but will give it a go!ReplyDelete

Try this easy and delicious potato salad, no need for 15 ingredients! Just prepare your potatoes as per usual, meanwhile, put 1/4 cup EVOO, 2 Tbsp vinegar (I use apple cider vinegar), 2 tsp dijon, 1 tsp caster sugar and s&p in jar and shake to combine. Dress the warm potatoes in half of this. Then add 1 Tbsp natural yoghurt and 1 Tbsp mayo to the jar, shake again and dress potatoes once more. So it's basically dressing your potatoes with vinaigrette and then adding some creaminess. I also add capers/parsley/spring onions.ReplyDelete

Errm, make that either 1/3 or 1/2 cup EVOO - can't do the math right now, but the usual ratio for vinaigrette is 3 parts oil to 1 part vinegar I believe... :)ReplyDelete
