Veggie Meal Plan

Oh boy. If there's one thing I can't wait for, it's for this trimester to be over. There's nothing quite like that vague queasiness that strikes you down, leaving you stranded on the couch wishing someone would feed you ice-cold grapes and tell you not to get up for the rest of the day.

I've been so very fortunate this time around to not suffer as much as I did last time, but I'm usually pretty green after every meal. Even if I only eat baby-sized portions! I can't get enough of fresh-squeezed, cold juice and quinoa tabbouleh with lots and lots of lemon. Other than that I have pretty much no appetite to speak of.

Doesn't stop me having to figure out what to feed the rest of my brood, however! This is what I've come up with for this week.  I'll be the one on the couch, moaning.

roasted eggplant and sundried tomato fettuccine
crispy strips, honey-soy sesame veggie saute
 tacos
baked sweet potato salad with pecans
grilled balsamic mushrooms with baked potatoes and salad

banana-honey cake

♥ veggie congee
 7-grain organic waffles

Enjoy!

  1. Yet again you've given me some great meal ideas.  I'm hating most forms of meat with this pregnancy, so I've been using your blog for lots of ideas.  Those mushrooms with baked potato will be in my stomach by the end of the week. xx

  7. I will do it sometime next week! I was pleasantly surprised, I quite liked it. Not usually a fan of tomatoey sauces, but they're so good for you!

  8. All the cool kids are doing it! I wanted to put in pecans, but remembered at the last minute the baby isn't supposed to eat nuts :-/
